Japanese Style Ginger Salad Dressing

My favorite salad dressing – a Japanese restaurant style dressing with a strong ginger flavor, but without the sugar and unhealthy oils!

Ingredients

1 chopped white onion

1/4 cup oil (olive or other)

2 tbsp. rice wine vinegar

2 tbsp. water

2 tbsp. chopped fresh ginger

2 tbsp. chopped celery

1 tbsp. tamari wheat-free soy sauce

6 oz. can tomato paste

1 tbsp. lemon juice

salt and pepper to taste

Directions

Combine all ingredients in food processor, chopper, or blender. Process until smooth.  Will save in refrigerator for up to a week.
