Awesome Chili

Chili is an easy meal that uses inexpensive ingredients and makes a lot of food.

This is my take on this American favorite.

Ingredients

1-2 lbs ground meat (buffalo, turkey, beef, whatever you prefer – for a fancier option use small cubes of steak or stew meat)

½ tablespoon peanut oil (if using lean meat)

1 diced white onion

2-4 tablespoons diced garlic

2 cans dark red kidney beans

2 cans light red kidney beans

1 can pinto beans or black beans

1 large can tomato sauce or diced tomatoes

1 cup sliced zucchini (or any vegetable you prefer)

2 packets taco seasoning

1 tablespoon cumin

1 tablespoon garlic salt

White pepper to taste

Salt to taste

Lemon or lime juice

For Garnish:
Fritos
Sour cream
Shredded sharp cheddar cheese

 

Directions

  1. Brown meat, onion, and garlic in large skillet (use oil if meat is lean to keep it from sticking).
  2. Transfer meat to large stock pot, add taco seasoning.
  3. Drain beans and any vegetables you want, add them to the mix. Add tomato sauce (or crushed tomatoes).
  4. Heat evenly over medium heat, stirring frequently. Add salt, cumin, garlic salt, and pepper to taste.   Freshly ground cumin really makes a difference in the flavor!
  5. Cook until beans are soft (usually 40-50 minutes)– sauce will be a bit thin. Add a squirt of lime juice. Let cool slightly, sauce will thicken.  Serve in bowls with garnishes on top.
