Primal Cauliflower “Rice”

I love rice, and giving that up was one of the harder aspects of primal living.  This cauliflower based replacement, though, is delicious enough that I don’t miss it at all anymore.  It’s versatile and a great way to bulk up a meal with extra veggies.

Ingredients

1 head fresh cauliflower

1 Tbsp. coconut oil, bacon grease, butter, or other oil.

1 Tbsp. diced garlic

Salt/Pepper to taste

 

Directions

1. Remove leaves from cauliflower. Shred entire head into a bowl with a coarse cheese grater or food processor. Grate to desired size (you can make it tiny to make a false couscous or larger to make rice.

2. Heat oil in large skillet.  When hot, add garlic and stir constantly – cook but don’t brown (browned garlic will turn bitter).

3. Stir in cauliflower, mix.  Cook, stirring often until it starts to become golden brown on the bottom and is desired texture (you can cook it firmer or softer but don’t let it get mushy).

4. Salt and pepper to taste.
